Christmas lunch can feel like the one day the Honeycomb way of eating has to take a holiday. It doesn’t. Think of Christmas like a Christmas tree: the tree itself is the same every year, and it’s the decorations that make it feel special. These are everyday plant-based recipes, dressed up with cranberries, pomegranate, mango, gingerbread spice and a big jug of gravy.
In our family we start with a brunch buffet and finish with dinner, so this collection covers both. Pick a few from each section, and you’ve got a whole Christmas Day that leaves you feeling light and well, not like you need a three-hour nap.
The brunch buffet
Set it all out, let everyone graze, and sit down with a cuppa yourself.
Spinach & Potato Tofu Frittata
Bake it on Christmas Eve. It slices beautifully cold or warmed through.
Savoury Chickpea & Spinach Muffins
A dozen in one batch. Bake them the day before and warm them in the oven.
Fluffy Vegan Protein Pancakes
Make a stack, keep it warm in a low oven, and set out the berries and maple syrup.
Blueberry Vanilla Baked Oats
Bake it in one big dish instead of ramekins and scoop it straight from the table.
Christmas lunch or dinner
A centrepiece, a jug of gravy and a tray of roast veg. Everything else can be a salad.
Chickpea Loaf with Smoked Maple Glaze
The centrepiece. Shape it on Christmas Eve, then glaze and bake it on the day.
Radish & Cucumber Mini Potato Salad
A creamy-style potato salad with no mayonnaise. Make it the day before.
